Our feature this weekend is roasted pheasant with a wild mushroom marsala cream sauce, toasted kamut risotto, grilled asparagus, sherry-brown sugar reduction, and fried sage. We have paired a classic wine from the Cote de Brouilly in Beaujolais, France. Nicole Chanrion, affectionately known as “La Patronne de la Cote,” or the Boss of the appellation creates wines with loads of pure fruit character and floral aromas from the vineyard on the hillside of the prehistoric volcano Mont Brouilly. Using traditional techniques like hand harvesting, whole cluster fermentation, aging the wines in large oak foudres, and bottling unfiltered, her wines are powerful and carry a sense of place.
