Our weekend feature is a Montana Wagyu bistro tenderloin roulade with roasted red pepper and arugula pesto served with smashed yukon gold potatoes, a stout mustard-cognac cream sauce, and grilled asparagus and brocollini. The juicy acidity of the Double Canyon Cabernet Sauvignon from the Horse Heaven Hills in Walla Walla, Washington is a beautiful pairing with ripe red fruit, allspice and dried tobacco.
