Our feature this weekend is a roasted half pheasant with a rosemary jus over a puree of celeriac and carrot with citrus asparagus and roasted grapes. This old world dish deserves an old world wine and we have chosen a beautiful Cabernet Franc from the Loire Valley of France. The Butte de Tyron is a one hectare parcel of limestone on the Domaine de la Petite Mairie that is harvested by hand, fermented in stainless steel and aged in 60 year old oak foudres in the classic style. This attention and care produces increased complexity, fine tannins, and vigorous but not overwhelming acidity to create a wine of energy and lift.
