For a taste of the exotic! Our rosemary and balsamic marinated Emu grills beautifully. With a flavor reminiscent of beef and a texture more like an elk steak we are excited to share this locally raised delicacy. Edamame and corn succotash, Flathead cherry reduction and a roasted heirloom tomato stuffed with mozzarella, pistachio, golden raisins, garlic and thyme add a rustic complexity to the dish. We have paired the Banshee pinot noir from Sonoma County for its elegant, soft earth aromas and balanced sweet and tart flavors of Santa Rosa plums and wild blackberries. With a bright and slightly herbal finish this is an excellent food wine, as well as a charming drinking experience by itself.
