Our feature this weekend is maple dijon Norwegian salmon with crushed pistachios, rosemary brown butter Yukon gold gratin, creamy crispy lacinato kale with pancetta, caramelized onion and garlic, and a pomegranate and maple reduction. With aromas of ginger, jasmine flower, pear, and kiwi the Hartford Court chardonnay adds an expressive pairing element. Fresh nectarine and grilled pineapple flavors are followed by subtle mineral notes and a hint of crystallized ginger on the finish.
