Striped Seabass - Lions de Suduiraut

Our feature this weekend is striped seabass in a local tomatillo herb broth, jasmine rice, herb salad with citrus creme fraiche, crispy shallot, and fiesta oil.  Fresh white flower and citrus fruit aromas open the Lions de Suduiraut Bordeaux blanc which evolves toward passion fruit and a delicate minerality.  Pink pomelo, pear, and toasted hazelnut notes carry through the extended finish.
