Soy Mirin Cornish Gamehen - Les Cocottes

Our feature this weekend is soy and mirin brined and grilled cornish game hen, dashi risotto, sauteed local komatsuna with miso and maple chanterelles, and eel sauce.  The Les Cocottes gamay from Anne Sophie DuBois is a delightful Beaujolais that is tart, tasty, and seriously delicious.  Cranberry, raspberry, and pomegranate flavors pop with a silky texture and clean, dry finish.
