Our feature this weekend is cider braised Montana wagyu short ribs with a smoked gouda and local buttercup squash polenta, charred broccolini, apple chutney, and a sherry caramelized honey gastrique. The classic Napa cab aromas of dusty dark fruits, spice, cedar, and vanilla are all present in the St Supery cabernet that we are pairing this evening. With juicy concentrated fruit, a lush mouthfeel, and a long, persistent finish this is an elegant and restrained wine that complements the richness of the dish nicely.
