Our entree feature this weekend is seared diver scallops over fontina white corn grits, with a smoked corn, snap pea, and roasted morel salad, candied bacon, and scallion crab beignets. Natural fermentation and restrained oak contact highlight the minerality and freshness of this limited pressing of chardonnay from Suzor Wines in the Willamette Valley of Oregon. Bright, clean fruit and beautiful acidity pairs with the rich scallops and earthy corn and mushrooms for a fantastic pairing.
