Our entree feature this weekend is fennel grilled Cordova Farms lamb chops with a green olive salsa verde, Amaltheia ricotta gnocchi tossed with confit fennel and charred heirloom roma beans. Ripe red fruits, spices, and black pepper stand out in the Spargolato, a Corsican red blend from Domaine Mondage. Smooth tannins and delicate smoke and toast aromas expand into a complex, mouth filling wine featuring the indigenous Corsican grapes Sciaccarellu, and Niellucciu, along with Grenache and a bit of Syrah.
