Our feature this weekend is Alaskan halibut steamed in banana leaves with hibiscus pickled onions, local beefsteak tomatoes, fresh parsley and sorrel served with a pineapple-dragonfruit salsa, plantain and sweet potato beignet, and fragrant jasmine rice.  60 year old vines of sauvignon blanc from the Loire Valley of France produce a stunning floral and elegant expression while 7 months of ageing  on the lees fills out the body of the L’Arpent des Vaudons from Jean Francois Merieau.
