Our featured entree this weekend is barramundi en papillote steamed with local Chance Farms carrots and garlic, shallots and ginger with jasmine rice and a sesame soy slaw with local cabbage, peashoots, cilantro microgreens, watermelon radish and crispy edamame. The Chablis from Domaine Costal is generous, fleshy, and discreetly tropical. All this richness of flavor is then funneled down to a pinpoint focus on the snappy finish. The palate is left with a flinty note akin to gunsmoke lingering after a shot.
