Our entree feature this weekend is an espresso-rubbed bison striploin finished with a roasted cherry tomato, ginger, and chili jam served over a local cauliflower and parsnip puree with grilled local vegetables and a smoked balsamic reduction. We are pairing the Cordero di Montezemolo Barolo with its floral and spicy aromas followed by a rich palate of tobacco, cherries, and cocoa. This full-bodied, elegant wine has very fine tannins and a velvety mouthfeel.
