Our feature this weekend is dry aged Marble Meats braised short ribs in a rich chili sauce, finished with a Mexican street corn salad with Chance Farms cherry tomatoes, a roasted tomatillo salsa verde, and toasted queso fresco.  The Barbera d’Asti from Olek Bondonio is lively and easy drinking with wild strawberry, fresh sage, thyme, and sumac-like tannins for a beautiful pairing.
