Our featured entree this weekend is an herb and vanilla brined, pan seared Montana pork chop with creamy gorgonzola polenta, sage apple butter, grilled vegetables, and smoked balsamic.  The bright cherry, rosehip, and floral aromas of the Castello dei Rampolla Chianti Classico is a beautiful pairing with refined tannins and a long, flavorful finish of chocolate and blackberry.
