Our feature this weekend is a Montana pork schnitzel with horseradish creme fraiche, chive spaetzle with lemon pepper butter, rose wine braised cabbage, and pickled vegetable and arugula salad. We want to pair a crisp, mineral driven wine and the shale and limestone soils in the Finger Lakes region in upstate New York deliver with the Forge Cellars’ Classique Dry Riesling. With aromas of mango, jasmine and flint this riesling has a balanced texture, straightforward while being both long and soft.
