Our feature this weekend is roasted pheasant stuffed with sausage and local pork belly over braised red cabbage and farro pilaf with acorn squash, pickled blackberries and a plum gastrique. We have paired a classic wine from the Cote de Beaune in Burgundy, France. Joseph Drouhin produces simple yet elegant Pinot Noir with delicate red fruit aromas, a round, generous palate and black fruit flavors displaying violets and warm spices.
