Our feature this weekend is rose and pink peppercorn salt dusted striped seabass, spring slaw with Gallatin Valley Botanical sunflower and pea shoots, shaved fennel, & cosmic crisp apple, smashed baby potatoes, and black cherry gastrique. The gamay rose from Domaine Dupeuble in Beaujolais is utterly delicious with notes of red fruit, melon, and rhubarb. It finishes with a subtle herbal note and food friendly acidity.
