Smoked Montana Pork Chop

Our entree feature this weekend is a house smoked Montana pork chop with a cotija and manchego stuffed fire roasted poblano, cherry tomato pico, ancho chili sauce, and an avocado crema.  These earthy flavors are complemented by the clarity and elegance of the Cipressi Nizza from Michele Chiarlo in Piedmont, Italy.  Mature cherry, raspberry, and sweet tobacco on the nose with complex flavors, a fresh softness, and a pleasing savory finish.
