Szechuan Beef Ribeye - Castello Chianti

Our feature this weekend is Szechuan peppercorn seared wagyu ribeye from St Ignatius, Montana finished with a miso honey butter, char-grilled Gallatin Valley Botanical broccolini & local mushrooms with tamari black garlic and chili.  The chianti classico from Castello dei Rampolla is an elegant wine with crushed flower, high toned red fruit, tobacco, and cinnamon aromas.  Maraschino cherry, pomegranate, smoked meat, and rosemary flavors with vivid acidity and solid tannins.
