Venison Sausage and Blueberry Stuffed Quail

Our feature this weekend is venison blueberry sausage and cornbread stuffed quail over local acorn squash and pearl barley risotto with crispy kale, pickled blueberries, sugared cranberries, and a red wine-maple gastrique.  The Andre Dupuis pinot noir from Macon, Burgundy has depth to match the rich flavors of this dish and a fresh fruit character that is a joy to drink.
