Our feature this evening is a spice rubbed Wagyu beef tenderloin with a wild mushroom cognac cream, broiled lobster with herb butter and a crispy bacon, tarragon, chive, and hazelnut crumble, creme fraiche and gruyere stuffed potatoes, and topped with a tomato, pickled mustard seed, and shallot relish. We are pairing the Two Wolves syrah from Santa Barbara, California. With plum, cherry, nutmeg, and caramel aromas you begin to savor the wine as soon as it hits your glass. This micro winery is certified organic and practices sustainability in the winery and vineyard.
