Our feature this weekend is a Calvados and cider braised wild boar shank with pickled apples, sweet potato-blue cheese mash, grilled broccolini, and local onions braised in red wine. We are pairing the Damilano Langhe Nebbiolo for its rich plum and cedar aromas followed by fresh red raspberry, juicy cranberry and herbaceous sage and rosemary notes. Medium bodied with firm tannins and a bright finish this wine is easy to love.
