Miso Honey Salmon - Pluchot Gamay

Our feature this weekend is miso-honey glazed Ora King salmon with a sesame cornflake crumble served over jasmine rice with grilled local baby bok choy and charred scallion, cilantro salsa.  A beautiful Gamay St. Romain pairs wonderfully with lush, dark red berries and plum along with crushed violet aromas.  On the palate black cherries and ripe raspberry mingle with a savory umami and peppery tingle.
