Butte de Tyron is a slow ripening vineyard of Cabernet Franc in Bourgueil, France that produces a wine of energy and lift with red fruit aromas and a limestone character. Present but fine tannins and the increased complexity delivered by the longer hang times that the fruit receives gives us a delicious wine to pair with our dish.
