Enjoy our featured entree of red wine braised bison short ribs with truffled parmesan polenta, pistachio-citrus gremolata, grilled broccolini and radish micro greens.  We have paired the Syrah from Chateau de St. Cosme for its aromas of violets, sandalwood, black pepper and cassis.  This intensely aromatic wine also shows deep and pure fruit flavors, firm tannins and as such is a natural match for this hearty braise.
