Soy Glazed Cornish Game Hen

Our feature this weekend is soy braised Cornish game hen with a miso and shiitake risotto, garlic sesame fried Amaltheia spinach, and pickled radish.  The flinty gamay noir grown along the steep slopes of Mont Brouilly from Chateau Thivin is brambly with pomegranate and spices over a mineral foundation.
