Bison Tenderloin - Petit Corbin

Our featured entree this weekend is grilled bison tenderloin finished with black truffle and chive butter, bacon and Amaltheia ricotta stuffed yukon gold, and grilled asparagus with a tarragon white balsamic vinaigrette.  The Clos Petit Corbin is a delicious merlot from St Emilion with a lip smacking,  red fruited prettiness.  Pure with a sense of grace this is an elegant wine that shows merlot’s essential character.
