Braised Lamb Shank

Our entree feature this weekend is a braised lamb shank with a vindaloo pan sauce, crispy fried risotto cake with spring peas topped with a sweet carrot chutney, cucumber raita, citrus, cilantro, and grilled vegetables.  Layers of rich red berry fruit (raspberry, cherry, spiced plum, and ripe strawberry) spring from a complex bed of crushed stone, potting soil, bay leaf, and pipe tobacco in the beautiful Clos Petit Corbin from St. Emilion, Bordeaux.
