Our feature this weekend is chili rubbed blue nose snapper with a warm local tomatillo salsa, huckleberry, gold potato, zucchini, and black bean succotash with charred tomato butter, snow leopard melon pico do gallo, and agave lime crema. Terra Alta in Catalonia, Spain produces beautiful mineral driven white wines of which the Herencia Altes grenache blanc is a stellar example. Aromas of white flowers, pear, and apple lead into bright citrus flavors and a refreshing acidity. Two months of batonnage on the lees adds body and richness.
