Our feature this weekend is grilled Cordova Farms rack of lamb in a citrus, Gallatin Valley Botanical garlic, and dijon marinade over a white bean puree with fresh herbs and Amaltheia delicata finished with pistachio honey butter. The delicious gamay noir from I. Brand & Family in the Santa Lucia Highlands is fermented “whole cluster” adding body and depth to this aromatic and vibrant wine. Aromas of red fruit, rose hips, and wild herbs along with a bright, crunchy acidity make it a delightful pairing for this Montana lamb.
