First Course – Scallop crudo with lime, citrus salt, white sturgeon caviar, pickled local snow leopard melon, and a basil-mint oil with the Roco RMS brut.
Second Course – Hapu seabass with a charred poblano and lemon salsa, roasted tomato millet, lemon parmesan chickpea puree, and grilled broccolini with Les Boursicottes sancerre.
Third Course – Guava poundcake with blackberries and the Michele Chiarlo Nivole moscato d’asti.
