Hapuka Sea Bass Wrapped in Prosciutto

Our feature this weekend is a prosciutto and heirloom tomato wrapped Hapuka Seabass with a pesto cream over roasted red pepper orzo with wilted local greens, whipped house made ricotta and charred local snap peas.  The graceful and complex Alexana Terroir Series chardonnay from Willamette Valley, Oregon provides the perfect acidity with notes of citrus zest and vibrant star fruit rounding into vanilla, wet stone, and rich toasted brioche flavors.
