Peppercorn And Porcini Wagyu New York

Our entree feature this weekend is a Bozeman grown Wagyu strip loin coated with peppercorns and porcini powder and served with brandy black garlic butter, potato and chive croquettes, grilled vegetables, and a local garlic scape chimichurri.  We are pairing Disciples from the Crane Assembly vineyard; a blend of zinandel, petite syrah, charbono, syrah, and merlot that brims with floral aromatics like lavender, violet, and roses.  The palate shows strawberry preserves and rich, earthy notes of freshly plowed soil and rain on warm granite with a long, strawberry cream and caramelized sugar finish.
