Our feature this weekend is veal schnitzel over rosemary spaetzle with a lemon dill butter, local charred cabbage, rainbow carrots, chioggia beets, and french radish tossed with a sherry vinaigrette, finished with a horseradish cream. A fresh and vibrant Bordeaux Superieur from Maison Sichel, the Chateau Argadens shows red berry fruit along with blackberry, blackcurrant and oak highlights. The harmonious balance of round tannins, fine aromatic length, and fruity back of palate freshness is to be savored.
