Our featured entree this weekend is grilled bison tenderloin finished with local mushrooms and a black garlic brandy butter over a crispy risotto cake with Amaltheia Dairy truffled chevre, spinach, and roasted squash.  The Miner Family Napa Cabernet is a beautiful pairing with red and black currant, tobacco leaf, and cedar aromas.  A medium bodied, elegant wine with terrific tannins and outstanding length.
