Espresso Rubbed Bison Tenderloin

Our featured entree this weekend is espresso rubbed bison tenderloin finished with chipotle butter, two chili grilled shrimp, roasted local pepper chimichurri, Gallatin Valley Botanical purple cauliflower and baby potatoes with a smoked balsamic reduction and arbol chili oil.  The Cote du Rhone blend of grenache, syrah, and mourvedre from Skalli shows notes of cherries, leather, and baking spices for a medium bodied old world red wine.
