Mezcal Marinated Pork Tenderloin

Our feature this weekend is mezcal marinated and grilled Montana pork tenderloin, roasted chili cream sauce, sweet corn cake, and Gallatin Valley Botanical tomatillo salsa.  A beautiful Gamay St. Romain pairs wonderfully with lush, dark red berries and plum along with crushed violet aromas.  On the palate black cherries and ripe raspberry mingle with a savory umami and peppery tingle.
