Our feature this weekend is prosecco salt dusted grouper with local summer herb pesto, crispy risotto cake with fresh chive and truffle salt, and braised GVB lacinato kale. Fresh and aromatic with notes of ripe apple, candied lemon, and a savory, lightly herbaceous character the Ramey Chardonnay from the Russian River Valley in Sonoma pairs nicely. Medium to full bodied, it is elegant and long on the palate with a delicate saline touch and a balanced feel throughout.
