Beef Tenderloin, Brandy Black Garlic Butter

Our featured entree this weekend is a grilled Montana beef tenderloin with brandy black garlic butter, gorgonzola potato croquettes, local delicata squash with a maple agrodolce, and fig balsamic reduction.  Aromas of sage, wild cherries, and violets open the Paul Hobbes pinot noir with layered flavors of pomegranate, blood orange oil, and rooibos tea.  Supple texture and well integrated tannins mark this elegant and graceful wine with a long and pure finish.
